I find that video suspect at best.  If you notice the hose the water is coming out of is shaking up and down.

I feel like they just shook the hose, put the video in super slow mo, and said they were controlling water with sound.

The effect in the video is the same as spinning rims on TV.  If the rims are spinning at the same speed as the camera shutter, each frame is taken with the rim in the same position.  If the rims are spinning say 23 rpm(or slower) and the camera is 24 fps, then each frame is taken with the rim at a position 1/24th the rotation backwards as it has not had time to reach the full rotation before the camera takes the next pic.  Extending this the rim will spin one rotation backwards every second and seem to go in reverse.  Similarly, if the rim spins at 25 rpm(or more) with a 24 fps camera then the rim will be at a position 1/25th after a full rotation.

If the rims are symmetrical it can happen at different speeds.  For instance the rim may have 5 or 6 spokes, in which case the rim spins one spoke per camera shutter and they still appear not to move.  That is the whole idea, the camera takes pictures of a moving object and only observes certain times.

With the water, the speaker makes distortions at similar speeds to the camera taking pictures.
